Loving It!

Here we are starting a new week with Collin.  He's been faithfully taking his medication and working really hard with me on homework.  We've been using all the tips that I have laid out in previous blogging.  It's working wonderfully!!  I have my son back, the one that wants a hug before bed.  The one who wants to help with everything!! I'm loving it! 

Last week I was sitting down at work talking to my boss's niece who mention that her children may have ADD or ADHD and that she has come across Jeddy's blend.  It's an essential oil being placed on the feet, back of neck, and wrists.  High reviews!! Becoming who I have always been.

Along life's journey I lost my way as I transitioned from that high school girl to a mother of 3.  It was not until I stood up for myself in 2009 to not become someone better, but to allow myself to become who I always have been.  Every day since December 26, 2009 I have gotten stronger.  In November of 2012 I met an astonishing woman named Kayla Ballog who gave me a opportunity of a lifetime with Skinny Body Care.  I never dreamed this opportunity would transition me back to the woman I always have been.  I have gotten out of my shell and with doing so met some very amazing people!  I'm so thankful to be able to reach out to others and change their life in whatever manner they need.  I refer back to this poem when people now come in and out of my life:

Be a Unicorn

All to often life gets complicated and we wish we were a kid again. As a kid life is simple no responsibilites!! Well I don't want to be a kid I want to be a unicorn!! 

Long night...flows into the morning

Last night Collin decides to tell me he finished all his homework at his Nene's (grandma) house. I decide to give him the benefit of the doubt since he's done awesome this week.  We get home he's helpful and in a good mood. I start feeling ill and guess what around bed time he informs me he has homework. I felt defeated, he lied to me. I said some harsh words to him. It didn't help the homework issue it made it worse. He finishes and takes another 20min to go to bed. Finally 930 he's in bed. Forward to this morning because of thelate bedtime he ia ddifficult to wake up. We head over to Nene's and he's bringing up my harsh words from last night. He ended up yelling and cussing this morning and refused to take his medicine. Of course I wouldn't allow that so he did get his medicine.  After 15 minutes of stress we hugged and said sorry. My point is with an ADHD child they tend to believe they are bad when they get mad. Collin's councelor always says its okay to be mad but not okay to be bad. They also hold on to the negative and don't know how to release it.

Lesson learned don't take a negative incident and add more negative to it. Instead resolve the incident immediatley in a positive manner with concequences.

It's Working!!!

In the past week I have been blogging about ADHD and the different methods one can use to help a child. Let me say it's WORKING for us!! I'm living it and I feel like I have a new son. He's listening, completing all of his homework in a much more timely manner.  I continue to compliment him and encourage him instead of using anything negative towards him. Much to my amazement he cleaned his room!! He was not even asked to do so!! (insert huge smile!!)

Bergman's Chicken Salad

Bergman's Chicken Salad

4 Chicken Breast
2 tsp Cinnamon
1 tsp Almond Extract
1 cup Sliced Grapes
1/2 cup Crushed Walnuts
1/2 cup Cranraisins or dried cranberries
Lemon juice
Sea Salt
Pepper
Water

Place raw chicken breast in a slow cooker. Add cinnamon and almond extract. Season with salt & pepper. Cover with water. Cook on high 3-4 hours until chicken is done. Remove from slow cooker and drain. Chop up the chicken well. In a blender combine chicken, walnuts, and lemon juice on pulse setting to mix ingredients well. Empty into a large bowl and add sliced grapes and cranraisins. Refrigerate until cold. You can leave as a side or use a wrap/bread.

Apple Chicken Sausage Patties


Apple-Chicken Sausage

1 large tart apple, peeled and diced
2 tsp. poultry seasoning
1 tsp. salt
1/4 tsp. pepper
1 pound ground chicken

Combine the first 4 ingredients in a large bowl. Crumble chicken over mixture and mix well.

Shape into patties.

In large skillet sprayed with cooking-spray, cook patties over med-high heat. Approx 5-6 minutes each side.

Makes 8 patties.

Energy, Frustrating, and Exhausting Oy!

 If you have a child similar to mine who is hyperactive, inattentive or impulsive I'm sure what I'm about to say you can relate to.  It takes a lot of my energy to get him to listen, stay on task or rather sit still!!  I have to monitor him constantly especially with homework and yes it is exhausting and frustrating as I feel at 10 yrs old and in 5th grade it's his responsibility to ensure things are done.  In some cases I feel like he has control even though I'm the parent!

I've learned there are strategies you an use to regain control and help the child with their abilities!
What is needed:

Routine- insert structure and consistency here.
Communication - insert clear
Rewards/Consequences for behavior.

More importantly they need: LOVE, SUPPORT, & ENCOURAGEMENT!!

First let's point out behaviors that occur with child that have #ADD or #ADHD

  • They don't listen to instructions, so no obeying them occurs
  • Keeps others waiting because of disorganization and distracted easily
  • Don't clean up, never finish projects
  • Interrupt conversations or demands attention
  • Talk before thinking (insert embarrassing comments here)
  • Difficult to get them to go to bed let along sleep
  • Physical danger sometimes

So how do you overcome this?

  1. Stay positive and healthy yourself
  2. Establish routine (structure and consistency) and stick to it!
  3. Set clear expectations and rules
  4. Encourage play (movement) and sleep
  5. Eat Right
  6. Teach your child how to make friends

Let me tell you these 6 tips are NOT easy! However after 2 years lacking of energy, being frustrated and exhausted I have started these and there is a huge difference in my son!  Life gets chaotic for us and routine is very hard. However, my son has a great teacher who has helped us with the homework area by setting expectations, rules, rewards/consequences.  He was reluctant at first but now after a week things are going well.

Ingredients

3 Cucumber, peeled, and diced
2 Tomato, diced
1 Onion, diced
1/2 cup Italian dressing

Mix all vegetables together in a large bowl. Cover with Italian dressing. Salt & Pepper as necessary.


Herbs & Tuna Melt

This is from my kitchen at home!! Yummy!!

Herbs & Tuna Melt

Ingredients

2 cans tuna
2 hard--boiled eggs, chopped
1/3 cup fat-free mayonnaise
1/4 cup minced chives
2 teaspoons minced fresh parsley
1/2 teaspoon dried basil
1/4 teaspoon onion powder
8 slices whole wheat bread, toasted
1/2 cup shredded reduced-fat cheddar cheese

Directions

Mix tuna, eggs, mayo, cheese and seasonings together in a bowl. On a ungreased cookie-sheet place 4 slices of whole wheat toast, top with tuna mixture.

Broil for about 1-2 minutes until cheese melts. Top with remaining whole wheat toast.

Serves: 4


Winter Sore Throat "Tea"

Make sure you have some of this ready... great recipe for sore throats and chest colds

Makes about 2 cups
2 lemons thoroughly cleaned and sliced
2 piece of ginger about inch thick sliced into thin pieces
Honey (about 1 cup-maybe more)

In a 12-16 oz. jar combine lemon slices and sliced ginger. Pour honey (organic is best) over it slowly. This may take a little time to let the honey sink down and around the lemon and ginger slices. Make sure when the honey has filled in all the voids, there is enough to cover the top of the lemon slices. Close jar and put it in the fridge, it will form into a "jelly". To serve: Spoon jelly into mug and pour boiling water over it. Store in fridge 2-3 months.

Homemade Decongestant

This homemade decongestant is good for breaking up chest congestion so you can clear it out. Anyone old enough to eat honey can take it.

Homemade Decongestant

Ingredients

1 c. honey
1 c. lemon juice
5-7 radishes
1 sm. red onion
6 garlic cloves (If my cloves are super-small, I use a couple more.)

Instructions

Wash, peel, and trim the vegetables as appropriate, and cut the onion into 2-4 chunks. Dump everything into the blender and blend until smooth.
Strain. Refrigerate between uses, for up to a week or so.

TO USE:
Adults take 2 Tbsp. once a day, or more as needed/desired.
Children take 1 Tbsp. once a day, or more as needed/desired.

Should begin expelling within 24 hours. (We have typically noticed it kicking in within the first couple hours.)

Blessing Bags

I have worked at the soup kitchen and gathered warm socks for those less fortunate.  Currently, I'm making up these bags to help.  Join me in doing this in your community.

"Blessing Bags" to keep in the car when you pass homeless people. Something special you can do with your children or grandchildren to teach them about caring/giving for those in need!

BLESSING BAGS

INGREDIENTS:
Gallon Size Ziplock bags
Chap stick
Packages of tissues
Travel size toothbrush and toothpaste
Travel size mouthwash
Comb
Soap
Hotel size shampoos
Razor
Shaving cream
Trail mix
Granola bars
Crackers
Pack of gum
Band aids
Coins or predetermined dollar amount, say 5.00 (could be used to make a phone call, or purchase a food item)
Hand wipes
You could also put in a warm pair of socks
A packet rain poncho
Tampons (for women)
A nice note or card telling them they are loved!

The ideas could be endless!

Assemble all the items in the bags, and maybe throw in a note of encouragement. Seal the bags and stow in your car for a moment of providence...or....drop some off at a food shelter place.

Homemade Decongestant

Ingredients

1 c. honey
1 c. lemon juice
5-7 radishes
1 sm. red onion
6 garlic cloves (If my cloves are super-small, I use a couple more.)

Instructions

Wash, peel, and trim the vegetables as appropriate, and cut the onion into 2-4 chunks. Dump everything into the blender and blend until smooth.
Strain. Refrigerate between uses, for up to a week or so.

TO USE:
Adults take 2 Tbsp. once a day, or more as needed/desired.
Children take 1 Tbsp. once a day, or more as needed/desired.

Should begin expelling within 24 hours. (We have typically noticed it kicking in within the first couple hours).

Another rough morning

How many of you struggle with a child that doesn't want to get up in the morning?  Who wakes up just angry? This is common in my house with my ADHD son.

So what works? Routine bedtime! Early bedtime about 7-730 for my 10yr old.
We also give him melatoin to help sleep. It's all natural our body actually makes it.
Set wake up time during school days.
All supplies/clothes ready the night before.
Routine mornings also help greatly.

Christmas Candy Sleighs

Candy Christmas Sleds ~~ made by Sherri Lynn Beitz-Prather

Items needed:
Kit Kat regular sized bars
Candy Canes
Hershey Mini's, (I used the Christmas Edition)
Ribbon and bows
Hot glue gun, two glue sticks

Mark two lines on the bottom of the Kit Kat bars, this is where you will attach the Candy Canes. Run a line of hot glue on your marks and attach the candy canes, do this one at a time and let them set up for a minute.

Put a drop of hot glue on the edges of the Hershey Mini's wrappers and attach them to the sled bottom, you will stack them 4, then 3, then 2, then 1. Let this set up for a minute.

Tie a pretty piece of ribbon around the sled, and tape the ends to the bottom of the sled, (don't use hot glue on the ribbon~~ don't ask)
Add a ribbon to the top!! Viola~~ a cute and edible gift!!

DIY Laundry Detergent

DIY Laundry Detergent

This is my recipe I have been using for about a year and a half now.
1 box of borax
2 small containers of oxy
1 box of super washing soda
1 box of baking soda
2-3 zote bars (I use the pink ones) its up to you I used 2 the last batch I made

It is all down the detergent aisle. The baking soda is the big box.
I take a cheese grater and grate the zote bars, then I add all the ingredients in a bucket and stir. I do this outside because of the powders being dusty. I use one of the scoopers from the oxy to measure it out. I do 2 scoops for each load of laundry. I have a front load washer and it is fine for it.

All to often in a technology world we do things for our children that make their lives easy.  I'm guilty of it too! However making their life easy is like giving them a handicap unknowingly.  We need to slow down and not move so fast in this fast paced world and teach our children what they need to survive. I've met many "privileged" children with all the newest fancy gadgets only to see them not know how to use their imagination. Imagination is the beginning of an idea which may turn into a product or more. Take control and show them life isn't easy but yet has so much to offer if you work it.

As a parent of a 10 year old boy with ADHD homework time is a nightmare!!  At our school the children have Ipad Mini's with all of their homework to be done through the device.  It's a learning process to say the least!  As I have learned children with ADHD need a routine for EVERYTHING!!

A Homework routine is best here is some guidelines -

  • Check your child's homework assignment book daily.  Be aware of what is accepted of the child.  You may need to get a copy of this directly from the teacher.
  • Set a time when homework is to be done each day.  We actually set a timer for each task.
  • Provide a quiet and calm environment with no distractions. Do not allow other family members to interrupt.
  • Allow your child to use the computer if the homework requires it.  Set a time frame so they don't stray away from the task on hand.
  • Schedule breaks during homework so they can "let off steam" ADHD kids tends to get frustrated easily.  Allow them a break to go do something else and come back to the task.
  • Praise/Reward your child for completing homework - us a star chart or something similar  that after so many they get a reward of their choice.  Positive feedback makes all the difference.

ADHD Tips

1. Don't blame yourself for your child's ADHD. Parents of children with ADHD can feel guilty and responsible, but you did not cause your child's condition. Focus on the positive: you can help, encourage and support your child now that you both know what the problem is.

2. Find out as much as you can about ADHD. Good ways to do this are to:
  • Talk to people involved in your child's care (doctors, teachers, nurses)
  • Read up on the subject - some further reading is recommended here
  • Use the internet. There are lots of useful websites and resources to download. Look here for some suggestions to get you started
  • Contact a support group. Organisations exist to help people with ADHD and their families
3. Accentuate the positive. By focussing on your child's strengths, and praising and rewarding good behaviour, you will boost their confidence and self esteem. Children with ADHD can fall into a vicious circle of bad behaviour, followed by criticism, which makes them feel bad about themselves, which then leads to further bad behaviour. Try to provide positive reinforcement of their strengths instead, to make them feel better and motivate them to behave well. Reward schemes using star charts or points, which gets the child something they want, can help to encourage and maintain good behaviour.

4. Communicate clearly and specifically. Tell your child what you want them to do, rather than what not to do; make sure you have their full attention by turning off the TV or radio and looking them in the eye; speak clearly without shouting; be specific with requests (For example, "please pick up your clothes and put them away in the wardrobe, then make your bed" rather than "clear up this mess, your room is a tip!").

5. Choose your battles and set clear rules. Focus on the most important areas of behaviour that you really want to change, and don't waste effort on less important ones. Agree clear rules with your child, and write them down to cut down on arguments.

6. Plan for peace. Organise things to avoid undue stress and confrontation. If trips to the supermarket with your child are a nightmare, try to rearrange your schedule so you can do them at a different time, or when someone else is with you to help. If long car journeys are a battle, break them up with frequent stops for your child to "let off steam".

7. Distinguish the behaviour from the child. Rather than criticising your child when they misbehave ("I've told you a million times not to interrupt while I'm talking on the phone, are you deaf?"), focus on the behaviour and its consequences ("It was really distracting when you kept interrupting just then, so it took much longer for me to finish the phone call, and now we might not get to the park in time to meet your friends").

8. Learn to distinguish "Can't" from "Won't".Every child misbehaves wilfully sometimes. Being loud and rowdy, interrupting people, refusing to sit still or being untidy can be deliberate in children both with and without ADHD. As your child's parent, you are best placed to become the expert on whether their behaviour is something that they can't help because of their ADHD (though even this can be worked on and improved), rather than wilful naughtiness.

9. Count to three and use "time out" when your child misbehaves. Counting to three gives your child the chance to "backtrack" on naughtiness and allows you to praise their decision to behave well: "Charlie, please give the truck back to James. I'm counting to three: one...(wait a few seconds), two.... (more forcefully),.. three. Well done, Charlie. James, how about saying thank-you to your brother?".
Time out provides a way for both you and your child to cool off. Choose a designated place (a chair, a step, a corner) and use a clock or timer for the time out period (five or ten minutes). Be firm: don't speak to your child during the time out and don't answer them if they speak. When the time is up, the slate is clean. If they refuse to go the designated place, impose a sanction - loss of computer time, no play date after school, etc - and stick to it.

10. Look after yourself. Being the parent of a child with ADHD can be exhausting, frustrating and demoralising. You cannot be a good parent if you are at your wits' end, so try to have a break and get some time to yourself or go out with friends. Talk to other parents in the same situation, and accept help and support when it is offered. Look after your own health, and go to your doctor if you feel depressed or unable to cope.

Tortilla Pizza Bites

Tortilla Pizza Bites

Ingredients:
1 package of Tortillas ( I used Lo Carb Tortillas)
Can of sauce
1 bag of shredded mozzarella
1 bag mini pepperoni slices or topping of your choice

Directions:
Pre Heat Oven to 400 degrees

You will use cupcake pans for this recipe
wash off the can and dry
use the can to cut out three circles in each tortilla and place them at the bottom of the cupcake pans.
Next you will add the sauce approx 2 tsp on top of each tortilla round.
Top with shredded Mozzarella and pepperoni slices.
Bake in oven for 12 minutes or until cheese is melted.
let cool for a few minutes and use a fork to remove from pan.
Enjoy!!!!

Caramel Apple Nachos

CARAMEL APPLE NACHOS

20 large marshmallows
3 Tbsp butter
20 caramels ( or use caramel ice cream topper)
1 Tbsp water
4-5 apples, sliced ( I used honey crisp )
toppings ( I used mini choc chips - you could also use crushed candy canes)

Stove-top: Melt the marshmallows and butter in a saucepan over low heat. Stir periodically until completely melted and smooth. Microwave: Place butter and marshmallows in microwave safe dish. Heat on high and for 1 min at a time.
Combine the caramels and water in a bowl and microwave until melted. I microwaved mine in 45 second intervals, stirring in between until the caramel was smooth. Arrange the sliced apples on a plate and pour the caramel and marshmallow mixtures over them. Add any additional toppings and serve immediately! If you are not serving immediately wrap secure and place in refrigerator. When you are ready to serve warm slightly in microwave to soften marshmallows. CAUTION: Use caution when carrying, it can ( and did ) drip off the plate.

REMEMBER!! WATCH YOUR PORTIONS! I have found that many do best when they control their portions rather than deny themselves food!

Ingredients:
*For the Cookie, you'll need:
2/3 C. Shortening
2/3 C. Butter, softened
1 1/2 C. White Sugar
2 Eggs
1 Tsp. Bourbon Vanilla Extract
Seeds from 1 Vanilla Bean
3 1/2 C. All-Purpose Flour
2 Tsp. Baking Powder
1/4 Tsp. Salt

*For the Buttercream Frosting, you'll need:
1 stick of Butter, slightly softened
1 Tsp. Vanilla Extract
1 pound Powdered Sugar
5 Tbsp. milk

Directions:
*For the Cookie:
1. Preheat oven to 350F.
2. In a large bowl, mix together shortening, butter, and sugar. Once mixed, stir in eggs, vanilla extract, and vanilla bean seeds. Then stir in flour, baking powder, and salt. Mix together until dough is mixed together.
6. Roll dough into balls, size depends on how small or large you want your cookies. Slightly flatten then place onto cookie sheet, about 2 inches apart from each other.
7. Bake 10-14 minutes. Time will depend on the size of your cookies. You will bake until bottom is light brown.
8. Remove from baking sheet and allow to cool before applying frosting.

*For the Frosting:
1. In a large bowl, with a fork, mix together softened butter, vanilla extract, and powdered sugar. Gradually mix in milk with an electric mixer until smooth and stiff.
2. Spread on top of COOLED cookie.

Makes Approximately 25 Medium-Sized Cookies.

Double Broccoli Corn Bread

Preheat oven to 375F. Lightly spray a 13 x 9 pan with low fat cooking spray.

In a 2 cup-capacity small bowl, combine and set aside:
2 cups cornmeal
1 cup almond milk

In a 4 cup-capacity medium-sized bowl, sift together:
3 cups almond flour
5 tsp baking powder
1/2 tsp sea salt
1 tsp pepper
1 tsp cayenne pepper (or smoked Paprika)
1 tsp garlic powder
1 tsp oregano
1 tsp basil

In a large bowl, cream:
1 cup unsalted butter

Gradually beat in 3/4 cup granulated Swerve, Truvia or Stevia, until smooth. Beat in half of the dry sifted ingredients. Now beat in 1 cup of almond milk and 2 whole eggs.

Now, mix in the last of the dry ingredients until thoroughly combined. Beat in a second cup of almond milk and 2 more whole eggs. Blend into the cornmeal mixture.

Chop 2 bags of frozen broccoli and then mix this also into the wet batter.
Grate 2 cups shredded cheddar cheese and add it to the batter, slowly mixing it in. Combine well.

Turn into the prepared pan and bake for 25 minutes. Turn heat to 400F and bake another 20 to 25 minutes (until toothpick comes out clean). (It will spring back when lightly touched). Cool for 5 minutes, cut into squares and remove from pan. Serve warm. ~ Enjoy!!!




Apple Pecan Crisp



1 Cup Chopped Pecan
1 cup brown sugar
1 cup rolled oats
1 cup all-purpose flour
1/2 cup butter, melted
4 cups apples - peeled, cored and chopped
2 teaspoons ground cinnamon
Drizzle a little caramel syrup on top.

Preheat oven to 350 degrees F (175 degrees C). Lightly grease 2 8-inch round pans.
In a large bowl, combine brown sugar, oats, flour and butter. Mix until crumbly. Do this in each pan-->Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Sprinkle with sugar and cinnamon and top with remaining crumb mixture. Then top each pie with chopped pecans.
Bake in the preheated oven for 40 to 45 minutes, or until golden brown. Don't forget to drizzle the caramel on top when its done.

Brownie Cheescake Bites

(Eat in moderation)
Ingredients

1 (19.8 ounce) package brownie mix
1 (8 ounce) package cream cheese
1 egg
1/3 cup white sugar


Prepare the brownie mix as directed by manufacturer. Preheat oven to temperature indicated on box. Grease a 9x13 inch pan.
Spread the brownie batter evenly into the prepared pan. Using an electric mixer, beat together the cream cheese, egg and sugar until smooth. Dollop the cream cheese mixture on top of the brownie batter. Swirl together using a knife or skewer.
Bake according to manufacturer's instructions. Brownies will be done when a toothpick inserted comes out clean. Cool in the pan, then cut into bars and serve.

The first thing you need to know though, is that you should allow at least 45 minutes to yourself for this, because the first half of the time is to detox and the second half is to soak-in. The longer, the better.

You can make your own mixture with other ingredients, but the basic ingredients are as follows:

-2 cups of Epsom salt (and add in another cup for every 50 pounds you are over 100 pounds)
-2 cups of baking soda

My Beautiful Daughter

This young lady is my daughter Anastasia.  I couldn't be more proud to be her mom.  She works hard in all areas of her life.  She is on the honor at school and has recently been chosen to go on an Education First Tour to Europe!!!  Paris, Rome, London, & Florence!! What a once in a lifetime opportunity this is!  It's funny for so many  years I never saw myself in her, now that she is maturing and coming into her own I see my determination for great things has rubbed off.  She also has worked so hard with her clarinet that she made the Wind Ensemble and 2nd chair clarinet!

My Daughter is my Mini Me

This beauty is my baby girl Briahna.  She is my mini-me in so many ways!!  She is a good student and loves basketball.  A flute player too!  I love capturing her on film her innocence shows so well as you can see by the photo I chose.  I'm also proud to be her mother!! She is stubborn and doesn't always think I'm proud but she is so wrong!!  I love everything about this girl of mine and am overfilled with pride!!  Baby girl the world is also in your hands you just have to go out and get it!!  I know you can hit honor roll this year just up that studying a tad bit more!! Read!! Reading is a gateway to many things...knowledge for one!  It can also take your mind to an imagination state where you can create your own world based on a book and create new ideas!!  Get it baby girl!!

My son is my rock!

This little man here is my son Collin.  Although Collin keeps me on my toes I wouldn't trade him for anything!!  He reminds me so many times to slow down and see life for what it is!  All to often I find myself so busy and he'll say MOM come look at what I found (insert a concerned face).  Thankfully, mostly I have to look at turtles and not any bugs! Did I mention I dislike bugs?  Collin is a VERY active boy although diagnosed with ADHD we have found ways to make our lives easier!  Stay tuned and I will share what we have learned that works and doesn't work!  He loves fishing and anything outdoors.  He is very smart just doesn't like doing homework =(  Although what kid does?  He's a blast and I'm proud to have him as my son!

Make Your Ice Cubes Sparkle!

Are your ice cubes cloudy? Do they look like they were chipped out of the pond last winter?
For crystal clear ice cubes, simply boil water, let it cool, then pour into your ice cube trays. Boiled water freezes clearly because it contains less oxygen.

Mac-n-Veggies Pasta Salad

Ingredients

4 cups uncooked macaroni
1 green bell pepper, diced
2 stalks celery, diced
1/4 cup grated carrot
1 large onion, diced

Sauce:

1 cup mayo
1/4 cup vinegar (distilled white)
2/3 cup sugar
2 1/2 tablespoons mustard (prepared)
1 1/2 teaspoons salt
1/2 teaspoon pepper

Directions:

Cook macaroni, rinse and drain well. Meanwhile dice up the veggies, place in a large bowl. In a separate bowl make the sauce. Add macaroni to veggies, fold in the sauce.

Refrigerate 4 hours before serving. Stir well prior to serving.

My Love of my Life

This man is my best friend and husband, Josh.  He came into my life in August of 2008 with no intention of becoming my best friend or husband!!  We became friends first and in December started dating and haven't looked back since.  We've been thrown a lot of mountains and only together have we overcome each and everyone of them.  Josh has stood by me in my darkest days I've ever faced in my life and I couldn't be more thankful.  When I was alone and there was nobody else he was there.  Although we have our spats the love between us you can't find anywhere else in this world.  I'm proud to be his wife!!  More thankful that he's my husband!! We have 5 years in our relationship only Married this year but I can't wait to share the rest of my life with this man. I love you Josh Bergman!! xoxoxo

Magic Chicken and Biscuit Casserole


Magic Chicken and Biscuit Casserole
Yield: 8 servings

4 Tbsp butter
2 chicken breasts, cooked and shredded
Up to 2 cups mixed vegetables (can use frozen, fresh or a mix)
¼ onion, diced small
1/2 cup shredded cheddar cheese
2 cups reduced fat biscuit mix
1 ½ cups skim milk
1 ½ cups chicken broth
2-3 chicken bouillon cubes (if using canned broth, use all 3)
1 can fat free cream of chicken soup

Heat oven to 350° F. In a 9X13 dish, place butter in cubes and allow to melt in the oven. Heat the broth and dissolve the bouillon, set aside. Remove the dish from the oven and layer chicken on top of the butter, do not stir. Place your favorite mix of vegetables and onions on top of the chicken, do not stir (I used corn, green peas, carrots, spinach and bell pepper). Top with the cheese, no stirring! Combine the biscuit mix and the milk, pour over the top and again, do not mix! Mix together the broth and the cream of chicken soup, pour THIS over the top of everything, again, DO NOT STIR…yep, it looks like a mess, but bake for 45-50 minutes and the magic happens! Remove when top is evenly browned and allow to sit for 5-10 minutes before serving. This is absolutely delicious!

Baked Parmesan Tomatoes

Baked Parmesan Tomatoes

4 tomatoes, sliced
1/4 cup freshly grated Parmesan cheese
1 teaspoon chopped fresh oregano
1/4 teaspoon salt
Freshly ground pepper, to taste
4 teaspoons extra-virgin olive oil

Preheat oven to 450° F

Place tomatoes cut-side up on a baking sheet. Top with Parmesan, oregano, salt and pepper. Drizzle with oil

Bake until the tomatoes are tender, about 10 minutes
